A Week Of Fruity Desserts: Lemon Cheese Bars

Lemon Cheese Bars combine two great things lemon and cream cheese. We like anything with cream cheese in it so this recipe is a hit at our simple home. So, if you like lemons, cream cheese, or a combination, then you will love this recipe.
 
Unlike most of the recipes I like to use, this one uses a cake box mix. I try to avoid as many processed foods as I can, but every once in a while if the recipe is worth it, I will make an exception. The cake box mix helps to make this recipe a quick, easy one to throw together. 
 
Lemon Cheese Bars 
  • a box of lemon cake mix (or you could use a yellow cake, especially if you don't want the recipe to be too lemony.)
  • 2 eggs
  • 1/3 cup of oil ( I use olive oil.)
  • 1 - 8 oz block of cream cheese
  • 1 tsp of lemon juice
  • 1 tsp of grated lemon peel 
  • 1/3 cup to 1/2 cup of sugar (depending on how tart or sweet you want it. We like it sweeter, so I used a 1/2 cup.)
Preheat oven to 350 degrees.

In a large bowl; combine the cake mix, 1 egg, and 1/3 cup of oil...

until it is crumbly.

Place the mixture into an 8" X 11" ungreased pan and ...

pat down until it covers the pan in a even layer.

Bake at 350 degrees for 15 minutes. Remove from oven and place on a cooling rack. 


While the crust is baking, cut cream cheese into small pieces. Place in a mixer bowl. Add your sugar, 1 egg, lemon juice, and ...

a tsp of grated lemon peel.

Mix until everything is combined and is fluffy.

Pour mixture on top of the crust. Put the pan back into the oven and bake for an additional 15 minutes in a 350 degree oven.

When it is done baking, remove from oven. Place on a cooling rack until cooled completely. Cut into bars and Enjoy!

When cooled, store in frig until ready to serve and store remaining bars in the frig.
