5 Ways To Fix Potatoes: Sour Cream Mashed Potatoes

Potatoes are a BIG hit around our house. We eat them at 2 to 3 times a week in some form or another. So I thought this week I would share some of our favorite potato recipes. 

Sour Cream Mashed Potatoes are a richer version of mashed or creamed potatoes. Instead of adding milk or cream, you replace them with sour cream. Add a little garlic salt, black pepper, and parsley, to make a delicious side dishes to serve along steaks, grilled pork chops, or chicken kabobs. The possibilities are endless. 

I like to cut potatoes up for mashed potatoes in long slices by cutting them lengthwise. I think they cook faster that way. I use about 6 to 8 potatoes when I make mashed potatoes for the 3 of us. Normally,  I just use 7 potatoes.  

The recipe calls for anywhere from 1/3 to 1/2 cup of sour cream. I suggest starting out with a smaller amount first, then taste and add more if needed. I have added WAY too much before and they were a little on the strong side, so I would start out with a little then add. 

Sour Cream Mashed Potatoes
  • 6 to 8 medium size potatoes, peeled & sliced lengthwise
  • 6 Tbsp of butter, cut into 6 pieces
  • 1/3 to 1/2 cup of sour cream
  • garlic salt, black pepper, & parsley - to taste
 
Peel, rinse, and slice 6 to 8 medium size potatoes lengthwise. Place the potato slices in a large pot and cover with cold water. Place on stove over high heat and bring to a rolling boil. Add a dash of salt and turn down to medium high. Cook potatoes until they can easily be broken apart with at spoon. 
 
When the potatoes are done, drain the potatoes in a colander. Rise pot out with hot water. Add butter to hot pot to begin the melting process. When drained, add the potatoes back to the pot and over the melting butter. 
 
With a potato masher, begin mashing the potatoes up. When they are mashed until they are almost no lumps left; add the sour cream, garlic salt, black pepper, and parsley. Mash the potatoes a little more just to make sure they are good and mashed. The final step is to use a whisk to incorporate all the ingredients well and to whisk them until they are light and fluffy. This will only take a minute or two, then they will be ready to serve.
