5 Ways To Fix Potatoes: Cheesy Cream Potatoes

This is the easiest way to spice up the usual mashed or cream potatoes and make them a little extra special. The only thing you need to make sure of is not to add to much milk when mashing the potatoes. If the potatoes are runny, they don't hold up the cheese you are going to put on top. So the mashed potatoes need to be a little on the thick side. 

Cheesy Cream Potatoes
  • a regular pot of mashed potatoes, on thick side
  • a block of cheddar cheese
  • a 8" X 11" baking dish

Preheat the oven to 350 degrees.

Make you mashed potatoes as usual, but don't add as milk or cream as you normally would. Pour the mashed potatoes into your baking dish. 

Cut thin slices of cheddar cheese and place on top of the potatoes until they are completely covered. Cut smaller pieces to fill in any holes. Push some slices of cheese down the sides between the potatoes and the dish. (This just gilds the lily.  If you really wanted to gild the lily, shred some cheese to mix in with the mashed potatoes.)

Bake in a 350 degrees oven until the cheese has melted nicely and looks like one solid mass instead of individual slices of cheese. Cool a little before serving.

This is one of my family's favorite dishes, because it combines two of their favorite things - potatoes and cheese. They especially like it with meatloaf or some sort of BBQ meat. If your family likes potatoes and cheese, they will love this!
