A Week Of Breakfast Breads: Banana Nut Bread

Truth time, I do NOT like Banana Nut bread and the rest of my family, not so much. However, my daddy loves it and since my momma can't stomach the smell of cooked bananas, I make it for him. On Father's Day and on his birthday, he knows he is going to be getting banana nut bread for a present. He shares some of it for a co-worker of his and I have made some for this co-worker as a present for Christmas. Daddy says it is really, really good. So, if you like Banana Nut Bread this recipe is just for you! 

Banana Nut Bread
  • 1/3 cup of Crisco (or shortening)
  • 1/2 cup of sugar
  • 2 eggs
  • 1 3/4 cup of all-purpose flour (I use 1 cup of white flour and 3/4 cup of whole wheat.)
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 1 cup of mashed bananas (usually takes about 2 to 3 bananas.)
  • 1/2 cup of chopped walnuts (optional)

All the ingredients you will need.

Preheat oven to 350 degrees. Grease and flour one 9" X 5" X 3 " loaf baking pan. I like to use 3 little loaf pans. 

Mash bananas up with a fork until you have enough to measure 1 cup. I cut the bananas into slices before I mash then up. 


 
In a mixing bowl, place the shortening and sugar. Combine and beat for about 1 minute. Stop and scrape down the bowl then beat for another minute or so until light and fluffy. 



Scrape down the sides of the bowl, then add eggs and beat until well combined.



In a large bowl; combine the flour, baking powder, baking soda, and salt. 


Add half of the flour mixture and half the bananas to the sugar mixture and beat for a minute. Scrape down the bowl then add the rest of the flour and bananas. Beat until well combined. 



At this point, add chopped walnuts and combine. 

Pour the batter into your prepared pan or pans. Bake at 350 degrees for 40 to 45 minutes. (If you use little pans, they take about the same baking time. Just keep an eye on them.)

Cool for 5 minutes in pans, then remove from pans and place of wire cooling rack. Cool completely. 

I use the 3 little loaf pans so that daddy can eat on one and freeze the rest for some other time. This bread freezes well. 

I am sure you could bake this batter in muffin tins. You will just have to adjust the baking time. When they start to getting golden brown on top and a toothpick comes out clean, then they are done. Enjoy!
